Avocado Black Bean Salad with Lime Dressing

Two years ago, one of the first dishes I ever made for Peter was a salad; which of course, minutes before serving it he told me that he hates salad. Great, I thought, I love a good challenge.

Since then, he’s come over to the green side, but that wasn’t enough... I was on a mission to convert his friends. 

A similar challenge came about last summer, when I was throwing a surprise BBQ party for his birthday. All guests were carnivores but I was determined to serve them veggies. This Avocado Black Bean Salad with Lime Dressing became a hit, so much so that our friends requested that it be made twice so far this summer; once at our Memorial Day BBQ and again at a friend’s birthday party.

I’ve attended many BBQs in the past and am witness to platters of wilted and wasted salad. Thinking back, they all kind of looked the same: sad spring mix in a bowl, unopened bottle of ranch dressing on the far opposite end of the table. Sound familiar?

Rule number one: It's should be a crime to serve plain spring mix and call it salad. This is how veggie lovers get such a bad rep from our carnivorous friends. In fact, as a reformed salad-hater myself, I know why most people don’t like salads. A salad-hater’s perception of salads is this: lettuce, tomato, cucumbers. Most likely the dressing is drizzled only on the top leaves, leaving the bottom leaves bland.

If that was the only type of salad I had, well frankly I wouldn’t like salads either. 

So, I do everything the opposite with this salad, including omitting leafy greens. I chop up all the ingredients, douse the veggies in a dressing and pre-toss it, ensuring flavor in every bite. Go ahead and throw out your idea of a traditional salad because this salad is not like the rest. With a hint of lime and spicy kick, it makes for an addicting salad that's loaded with flavor, full of protein and healthy fats. Makes a perfect side dish but shines on its own. Come over to the green side and see for yourself. 

Avocado Black Bean Salad with Lime Dressing


6 limes, juiced
2 ripe avocados, diced
1 15oz can black beans, unsalted, drained
1 15oz can corn, unsalted, drained
2 cups cherry tomatoes, halved
½ cup red onion, minced
½ cup cilantro, chopped
1 tsp garlic powder
¼ tsp cayenne pepper
1 tsp sea salt
1 tsp pepper


1. In a large bowl, add the juice of 6 limes.
2. Add the diced avocado and toss well with a spoon to ensure all sides are well coated; this will prevent the avocado from turning brown. Then add the canned black beans, corn, cherry tomatoes, red onions and cilantro.
3. Season it with garlic powder, cayenne pepper, sea salt and pepper.  Gently combine ingredients and adjust seasonings according to taste.
