Healthy Pumpkin Bread


Wet ingredients:
1 cup pumpkin purée
2 eggs
½ cup honey

⅓ cup coconut oil or extra-virgin olive oil
¼ cup almond milk
1 tsp vanilla extract

Dry ingredients:
1¾ cups whole wheat flour
2 tsp cinnamon, plus more to swirl on top
¼ tsp nutmeg
¼ tsp cloves
¼ tsp salt
1 tsp baking soda



1. Preheat oven to 350 F. Lightly coat bread pan with coconut oil.

2. In a large bowl beat eggs and combine all wet ingredients, pumpkin, honey, oil, milk and vanilla extract. In a medium bowl, combine all dry ingredients, flour, cinnamon, nutmeg, cloves, salt and baking soda. Gradually pour pumpkin mixture and stir until combined. 

3. Pour batter into loaf pan and bake for ~60 minutes, or until knife inserted in the center comes out clean.
